- 1/2 cup fresh shelled peas or frozen peas
- 1 medium yellow pepper, thinly sliced
- 1 small sweet potato, peeled and grated
- 12 None egg whites
- 1/2 cup reduced fat sour cream
- 1 cup loosely packed fresh basil leaves
- 1/4 cup finely grated Parmesan cheese
Directions

1Preheat the broiler. Cook peas, pepper and sweet potato in medium nonstick skillet on medium heat, stirring, for 3-5 mins, or until just tender.

2Whisk egg whites and sour cream in a large bowl until combined; stir in basil.

3Pour the egg white mixture over vegetables. Cook, covered, on low heat for 10 mins, or until almost set.

4Sprinkle Parmesan cheese over frittata. Broil until top is lightly browned and set. Cut into slices to serve.
