Lightened Broccoli Salad

  • 3 cups broccoli florets, small florette pieces
  • 12 cup light mayonnaise
  • 14 cup Splenda sugar substitute
  • 2 tablespoons rice wine vinegar
  • 14 cup red onion, finely chopped
  • 3 tablespoons dried craisins
  • 2 tablespoons almonds, sliced
  • 3 tablespoons cheddar cheese, shredded

Directions

    Wash fresh broccoli, cut into small bite-sized pieces.

    Place in deep bowl.

    Add onion, crasins and almonds; toss.

    In separate bowl, blend mayo, Splenda & vinegar till smooth.

    Pour over broccoli mixture, toss well until coated.

    Sprinkle with cheese.

    Chill for at least 2 hours for flavors to blend.
