- 1 c. buttermilk
- 1/4 c. liquid egg substitute
- 2 Tbsp. canola oil
- 1 c. flour
- 1 c. whole wheat flour
- 1/4 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
Directions

1Heat oven to 400°.

2Spray muffin cups with vegetable coating. Combine egg substitute, oil and buttermilk.

3In separate bowl, combine flours, sugar, baking powder, soda and salt.

4Add to liquid ingredients and mix just until combined.

5Fill muffin cups 2/3 full.

6Bake for 18 to 20 minutes.
