Lima Beans With Bacon

- 3 c. dried lima beans
- 1 lb. slab bacon or salt pork
- 1/2 tsp. crushed red pepper
- 1 small onion
- 1 clove garlic, crushed
- salt and pepper to taste
Directions

1Wash the lima beans and soak in cold water for about 1 hour (prolonged soaking makes the beans mushy).

2Put the bacon or salt pork in a large pot.

3Cover with boiling water and add the red peppers, onion, garlic and a little salt and pepper.

4Cover and simmer until bacon is tender (about 30 minutes).

5Drain the lima beans well.

6Add to the bacon or salt pork mixture.

7Taste and add more red peppers, salt and pepper if necessary.

8Simmer covered over low heat for about 1 hour.

9Add more water if necessary to prevent drying out.

10Slice the bacon or salt pork and serve on top of the beans if desired.
