Lime Broiled Catfish

- 1 Tbsp. butter or margarine
- 2 Tbsp. lime juice
- 1/2 tsp. salt (optional)
- 1/4 tsp. pepper
- 1/4 tsp. garlic powder
- 2 catfish fillets (6 oz. each)
- lime slices or wedges (optional)
- fresh parsley (optional)
Directions

1Melt butter in saucepan. Stir in lime juice, salt, pepper and garlic powder.

2Mix well. Remove from heat and set aside.

3Place fillets in a shallow baking dish.

4Brush each fillet generously with lime-butter sauce.

5Broil for 5 to 8 minutes or until fish flakes easily with a fork. Remove to a warm serving dish. Spoon pan juices over each fillet.

6Garnish with lime and parsley, if desired.

7(I usually do the whole recipe in a skillet so I don't have to clean the oven!)

8Serves 2.
