  • 1 Tablespoon Unsalted Butter
  • 1 cup Long Grain White Rice
  • 3/4 cups Coconut Milk
  • 1 cup Water
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 1 whole Lime, Juice And Zest

Directions

    In a large saucepan over medium heat, melt butter, then add rice and cook, stirring, for 1-2 minutes. Add coconut milk, water, salt, pepper, lime juice and zest and bring to a boil. Reduce the heat to low, cover and cook for 15 minutes.

    Remove the pan from the heat and let stand for 5-10 minutes. Fluff the rice with a fork and enjoy!
