Ingredients

  • 14 oz/400ml heavy cream
  • 2 tsp lime juice
  • 0.1 oz/3g gelatin sheets, bloomed
  • 3.1 oz/88g white chocolate
  • 2 g/1/2 tsp lime zest

Directions

    Boil the cream and lime juice and add the gelatin. Pour this over the chocolate to make a ganache. and then add the zest.

    Cool overnight and whip as needed.
