- 2 tablespoons butter
- 1 small onion, peeled, finely chopped
- 2 cups longgrain white rice
- 3 3/4 cups vegetable or chicken stock
- 1/4 cup fresh lime juice
- 2 teaspoons grated lime peel
- Chopped fresh parsley or cilantro
Directions

1Melt butter in heavy large saucepan over medium heat.

2Add onion and saute until tender, about 10 minutes.

3Add rice and stir to coat.

4Add stock, lime juice and lime peel.

5Bring to boil, stirring occasionally.

6Reduce heat to low, cover and cook until rice is tender and liquid is absorbed, about 20 minutes.

7Remove from heat and let stand covered 5 minutes.

8Season to taste with salt and pepper.

9Transfer rice to serving bowl.

10Sprinkle with parsley or cilantro.
