Lime Salad

Ingredients

  • 16 large marshmallows
  • 1 c. milk
  • 1 large pkg. lime Jell-O
  • 1 (20 oz.) can crushed pineapple (do not drain)
  • 1 (8 oz.) pkg. soft cream cheese
  • 1 c. whipping cream (whipped to form peaks)
  • 3 Tbsp. mayonnaise or Miracle Whip
  • 2 Tbsp. sugar

Directions

    In top of double boiler over boiling water on medium heat melt marshmallows in milk.

    Add gelatin, stir until dissolved.

    Add cream cheese until smooth.

    Remove from heat and add undrained pineapple and refrigerate until thickened.

    Fold in whipped cream, mayonnaise and sugar.

    Pour into large (9 x 13-inch) Pyrex dish or 2 medium molds.

    Refrigerate.

    Especially good with turkey and dressing.
