  • 1 pkg. linguica
  • 6 medium red potatoes
  • 1 medium onion
  • 1 red pepper
  • 1 green pepper
  • 2 medium tomatoes
  • 1 Tbsp. oil
  • garlic powder
  • parsley
  • salt
  • pepper

    Cut linguica into 2-inch chunks. Cube potatoes; slice onion and peppers into thin strips. Dice tomatoes into 1-inch chunks. In a large casserole dish, layer potatoes, onions, peppers and tomatoes. Drizzle oil and sprinkle a little garlic powder, parsley, salt and pepper. Top with linguica. Cover dish and cook at 350° for approximately 1 hour.
