Ingredients

  • 1 c. butter or margarine (2 sticks)
  • 2 eggs
  • 1 c. sugar
  • 1 tsp. almond extract
  • 3 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. raspberry preserves (Smucker's)
  • confectioners sugar

Directions

    Cream butter and sugar.

    Blend eggs, extract, flour, salt and baking powder.

    Mix well.

    Chill at least 1 hour before rolling. Roll 1/4-inch and cut with round cutter.

    Cut half again without centers.

    Bake on ungreased cookie sheet at 350° for 8 minutes. Will look white (do not overbake).

    Cool on wire rack.

    Spread preserves on bottom.

    Sprinkle with confectioners sugar and then put them together.
