- 1 cup celery sliced
- 3/4 cups onions chopped
- 1 1/2 cups chicken broth reduced-sodium
- 8 slices whole wheat bread cubed and dried
- 2 tablespoons parsley leaves dried
- 1 1/2 ts poultry seasoning
- 1/2 teaspoons salt
- 2 large egg whites
- 1/4 cups apricots, dried chopped
Directions

1In small sauce, over medium high heat, combine celery, onion and chicken or turkey broth; bring to a boil.

2Reduce heat to low; cover and simmer 5 minutes or until vegetables are tender.

3In a large bowl, combine celery mixture, bread cubes, parsley, poultry seasoning, salt, egg whites and apricots.

4Spoon into lightly greased 2 quart casserole; cover.

5Bake at 350F (180C) for 30 minutes or until heated through.
