Ingredients
- 1 c. white rice
- 1 qt. skim milk
- 1 stick cinnamon
- 1 tsp. vanilla
- zest of 1/2 lemon
- 3/4 c. sugar
- ground cinnamon
Directions

1In a 3-quart saucepan, add cold water to rice (enough to cover).

2Boil for 5 minutes.

3Drain rice and rinse under cool water in strainer.

4Return rice to saucepan and add 1 quart hot milk, lemon zest, cinnamon stick and vanilla.

5Simmer for 10 minutes.

6Add sugar.

7Stir and simmer for 10 more minutes.

8Pour into serving container and let cool.

9Sprinkle with cinnamon and serve.
