Directions

1Place chicken in soup pot seasoned with salt, pepper and onion.

2Cover with water and cook over medium heat until chicken is tender.

3Remove chicken from liquid.

4Remove skin and bones. Cut meat into small cubes.

5Put meat back into liquid and cook for 1/2 hour more.

6Remove chicken from pot.

7Press chicken into a Pyrex dish.

8Pour liquid just to cover chicken.

9Refrigerate overnight.

10Serve chilled, sliced thin; garnish with parsley.
