- 1 lb. pork liver
- 1/2 c. onion, chopped
- 1/2 c. chopped celery
- 1 c. tomato juice
- 1/2 tsp. pepper
- 1/4 c. fat
- 1/2 c. green pepper, chopped
- 2 c. cooked rice
- 1 tsp. salt
Directions

1Cover liver in boiling water.

2Simmer 10 to 12 minutes.

3Drain and cut into small cubes.

4Brown liver, onion, pepper and celery in hot fat.

5Mix rice and tomato juice with liver and vegetables. Add salt and pepper.

6Bake at 350° for 1 1/2 hours.

7Serves 5 to 6.
