Ingredients
- 1 lb. pork liver or 3/4 lb. beef liver
- 1/2 c. flour
- 1/2 c. melted shortening
- 1 c. water
- 1 onion, chopped
- 1 c. celery, chopped
- 1 green pepper, chopped
- 1 can tomatoes, chopped
- 1/2 c. barbecue sauce
Directions

1Preheat oven to 425°.

2Cut liver into bite size chunks.

3Coat with flour; place in uncovered baking pan with 1/3 cup melted shortening.

4Sprinkle with salt and pepper.

5Brown in oven about 20 to 25 minutes, stirring occasionally.

6Saute onion, celery and green pepper in remaining shortening in frying pan.

7Cook until onion is clear.

8Stir in 3 tablespoons flour; add 1 cup water, tomatoes and barbecue sauce.

9Cook until thickened.

10Drain liver. Place in casserole and pour sauce mixture over liver.

11Cover and return to oven.

12Reduce heat to 300° and bake about 30 minutes. Serves 5 or 6.
