Liver Dumplings

  • 1 1/2 lb. ground liver
  • 2 eggs (beat first)
  • 3 Tbsp. butter
  • 3 small onions
  • 1 1/4 c. bread crumbs
  • 5 Tbsp. flour
  • salt and pepper
  • chicken stock

Directions

    Mix liver, eggs, bread crumbs and flour.

    Saute onions in butter; add onions to mixture.

    Roll liver balls in flour.
  4. 4
    Cook in hot chicken broth for 20 minutes with lid off.
  5. 5
    Add egg noodles when dumplings are just about boiling in broth.

    Do not drain broth.
