  • 1 pkg. medium egg noodles
  • 1/4 c. butter
  • 2 medium onions, chopped
  • 3 Tbsp. flour
  • 2 c. milk
  • 2 Tbsp. chopped parsley
  • 1 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 tsp. Worcestershire sauce
  • 1 c. small curd cottage cheese
  • 1 pkg. (10 oz.) frozen peas, thawed
  • 1 1/2 c. cooked, sliced carrots
  • 1 c. (4 oz.) shredded, sharp Cheddar cheese

Directions

    Cook noodles.

    Preheat oven to 350°.

    In medium saucepan melt butter.

    Add onions and saute until soft, about 2 to 3 minutes. Stir in flour and cook on medium heat for 1 minute, stirring constantly.

    Slowly add milk, parsley and seasonings.

    Cook until sauce thickens, stirring frequently.

    Stir in cottage cheese and cook, stirring constantly until smooth.

    Combine noodles, vegetables and sauce.

    Cover and bake 25 minutes.

    Remove cover, sprinkle with cheese and bake 5 more minutes.
