  • 1 box seedless raisins
  • 1/2 c. bourbon
  • 1 1/2 c. sifted all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg and cloves
  • 1/4 c. soft butter
  • 1/2 c. packed light brown sugar
  • 2 eggs
  • 4 c. quartered pecans
  • 1/2 lb. diced candied pineapple
  • 1 lb. candied cherries, halved

    Mix raisins and bourbon well; let stand 1 hour.

    Sift together the flour and spices; set aside.

    Place butter in a large mixing bowl.

    Add brown sugar and eggs.

    Beat until light and fluffy. Beat in flour mixture.

    Stir in raisins, pecans, pineapple and cherries.

    Drop from teaspoon onto greased cookie sheet.

    Bake in 325° oven for about 15 minutes or until firm.

    Remove to wire rack to cool.

    Store in airtight container.
