Ingredients
- 5 lb. potatoes
- 3/4 c. sour cream
- 1/2 c. milk
- 3 Tbsp. margarine
- salt and pepper
- 3 c. shredded Cheddar cheese, divided
- 1/2 lb. bacon, cooked and crumbled
- 3 green onions, sliced
Directions

1Peel and dice potatoes.

2Place in a Dutch oven; cover with water.

3Boil until tender.

4Drain and place in a very large bowl (or back in Dutch oven).

5Add sour cream, milk, butter, salt and pepper to taste.

6Beat on medium-low speed until light and fluffy. Stir in 2 cups cheese, the bacon and green onions.

7Transfer to a greased 3-quart baking dish.

8Top with remaining cheese.

9Bake, uncovered, at 350° for 30 minutes or until heated through and cheese is melted.

10Serves 14.
