- 5 lb. potatoes, peeled and cubed
- 3/4 c. sour cream
- 1/2 c. milk
- 3 Tbsp. butter or margarine
- salt and pepper to taste
- 3 c. shredded cheddar cheese blend, divided
- 1/2 lb. sliced bacon, cooked and crumbled
- 3 green onions, sliced
Directions

1Place potatoes in a Dutch oven and cover with water; bring to boil.

2Reduce heat; cover and simmer until tender.

3Drain and place in mixing bowl.

4Add sour cream, milk, butter, salt and pepper.

5Beat on medium-low speed until light and fluffy.

6Stir in 2 cups cheese, bacon and onions.

7Transfer to greased 3 qt. baking dish.

8Top with remaining cheese and bake, uncovered, at 350 degrees for 30 minutes or until heated through and cheese is melted.

9Yield: 14 servings.
