- 1 whole Egg, Lightly Beaten
- 1/2 cups Sour Cream
- 1/2 cups Cheddar Cheese, Grated
- 4 Tablespoons Chives, Minced
- 1/2 cups Flour (I Used Whole Wheat)
- 4 cups Cold Mashed Potatoes
Directions

1Heat waffle iron.

2Combine beaten egg, sour cream, cheddar cheese and minced chives in a large bowl. Mix in flour. Fold in cold mashed potatoes. Mix well.

3Coat heated waffle maker with nonstick spray oil. Place 1/4 cup scoop of potato mixture onto the center of the waffle iron and cook until golden brown. Repeat with remaining potaffle mixture.

4Serve with additional sour cream and chives, if desired.

5Tip: Remove cooked waffles to a sheet pan and keep warm in a 250° heated oven.
