  • 2 lb Potatoes, diced
  • 2 tbsp Cooking Oil
  • 1/2 cup Sour Cream
  • 1/4 cup Mayonnaise
  • 2 each Green Onions, chopped
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/2 cup Cheddar Cheese, shredded
  • 1/2 cup Bacon, crumbled

Directions

    Dice potatoes, toss with cooking oil.

    Then place them on a sheet pan and place in a 350F oven until tender.

    (30-40 minutes)

    Remove potatoes from oven and allow to cool completely.

    To make the dressing:

    Combine sour cream, mayonnaise, green onions, salt and pepper.

    Then whisk thoroughly to combine.

    Fold cheese and crumbled bacon into the dressing.

    Place cooled potatoes and completed dressing in a bowl and gently combine.
