Lobster Bisque

Ingredients

  • 2 Tbsp. butter
  • 1 tsp. minced onion (real onion)
  • 2 Tbsp. flour
  • 1 Tbsp. tomato paste
  • 2 c. hot chicken broth
  • 1 1/2 to 2 1/2 c. lobster, shrimp and crab meat
  • 1 c. milk
  • 1 c. cream
  • salt and cayenne pepper to taste
  • white wine

Directions

    Melt butter; saute onion.

    Stir in flour and paste.

    (Wondra flour best.)

    Have broth ready, on low flame.

    Stir until thick (not lumpy).

    Stir in fish; simmer 10 minutes.

    Stir in milk and cream.

    Season with salt, cayenne and wine.

    (Never let it bubbly boil.)
