Squash Casserole

  • 3 lb. squash (yellow)
  • 1/2 stick oleo
  • 1 onion or chive, chopped
  • 2 eggs, beaten
  • 1 1/2 c. grated Cheddar cheese

Directions

    Cook sliced squash in 2 cups water until tender.

    Drain and mash squash and drain again.
  3. 3
    Add 1/2 stick oleo (melted), 2 beaten eggs and 1 cup grated sharp Cheddar cheese and mix.
