Lobster Bisque

Ingredients

  • 2 Tbsp. butter
  • 1 tsp. chopped onions
  • 1 sprig parsley
  • 1 1/2 c. finely chopped lobster meats
  • 2 c. chicken broth
  • 2 Tbsp. flour
  • 1 Tbsp. tomato paste
  • 2 c. thin cream
  • salt and cayenne

Directions

    Saute onion and parsley in butter until onion is golden.

    Add lobster meat.

    Cook and stir 5 minutes.

    Stir in flour and tomato paste.

    Add chicken broth.

    Simmer 20 minutes.

    Remove the parsley.

    Add the cream.

    Season to taste with salt and cayenne. Heat, but do not boil.
