  • 3 hard-boiled eggs
  • 2 Tbsp. cream
  • 1/2 lb. butter
  • 2 Tbsp. flour
  • 1/2 pt. cream (1 c.)
  • 1 pt. lobster (2 c.)
  • 4 Tbsp. sherry
  • salt and pepper to taste

    Use double boiler.

    Gradually add cream to finely mashed egg yolks.

    Melt butter in double boiler and add flour.

    Add cream gradually and stir to boiling point but do not boil.

    Add egg yolks and lobster.

    Keep over hot water until thoroughly heated. Add sherry, salt and pepper.
