Lompoc Chocolate Mousse

- 12 oz. semisweet chocolate chips
- 3/4 cup hot coffee
- 3 tbsp. orange liqueur such as Triple Sec
- 2 tbsp. sugar
- 2 cups whipping cream
Directions

1Place chocolate chips in a metal bowl or the top of a double boiler.

2Add the hot coffee and stir.

3(If the chocolate does not melt completely, place the bowl over hot, not boiling, water and stir until melted.)

4Remove from heat, add the orange liqueur and let the chocolate cool slightly (about 30 minutes).

5Combine sugar and whipping cream in a large bowl and beat with an electric mixer until stiff peaks form.

6When the chocolate is cooled, gently use a spatula to fold it into the whipped cream until well combined.

7Chill for at least 2 hours before serving.
