Long John Silver Fish Batter

  • 1 cup beer
  • 1 1/3 cup flour
  • 1 tbsp. butter
  • 2 eggs - separated
  • 1 tsp. horseradish or dry mustard
  • Salt and pepper to taste

    Blend beer, flour, butter, egg yolks and seasoning.

    Let stand for 10 minutes.

    Beat egg whites until stiff.

    Fold into batter.

    Dip cleaned and deveined shrimp or fish into batter. Deep fry at 375 for 5 to 7 minutes.
