- 3 lb. boneless chuck roast
- 1 c. low-carb barbecue sauce
- 1/2 c. sugar-free apricot preserves
- 1 Tbsp. Dijon mustard
- 2 tsp. packed brown sugar
- 1 onion, sliced or chopped
Directions

1Remove excess fat from beef.

2Cut into 4 pieces.

3Place beef in a 4 to 5-quart slow cooker.

4Mix remaining ingredients; pour over beef.

5Cover and cook on low heat for 7 to 8 hours or until beef is tender.

6Remove beef from slow cooker.

7Cut into thin slices or shred; stir back into sauce.

8Cover and cook 20 to 30 minutes more, or until beef is hot.

9Makes about 12 sandwiches. Serve on low-carb buns or alone with sugar-free coleslaw.
