Low Carb Fried Ice Cream

- 1 1/2 cups ice cream low carb
- 1/4 cup heavy whipping cream
- 1 cup bread crumbs fine, I use low carb or paleo bread
- 1/2 teaspoon cinnamon
- oil for frying
Directions

1Scoop ice cream into 1/4 cup balls.

2Place in freezer and freeze for 1 hour.

3Place whipping cream in shallow bowl, and combine bread crumbs and cinnamon in second shallow bowl.

4Working rapidly, dip ice cream balls in cream, then roll in crumbs to coat.

5Return to freezer for another hour.

6Repeat dipping process.

7Freeze again, preferably overnight.

8Preheat oil to 375° in deep kettle or fryer.

9Remove only one ice cream ball at a time from freezer.

10With tongs, hold ice cream in oil turning slightly until golden, approximately 5-10 seconds.

11Remove from oil and serve immediately.
