Low Carb Fried Ice Cream

  • 1 1/2 cups ice cream low carb
  • 1/4 cup heavy whipping cream
  • 1 cup bread crumbs fine, I use low carb or paleo bread
  • 1/2 teaspoon cinnamon
  • oil for frying

Directions

    Scoop ice cream into 1/4 cup balls.

    Place in freezer and freeze for 1 hour.

    Place whipping cream in shallow bowl, and combine bread crumbs and cinnamon in second shallow bowl.

    Working rapidly, dip ice cream balls in cream, then roll in crumbs to coat.

    Return to freezer for another hour.

    Repeat dipping process.

    Freeze again, preferably overnight.

    Preheat oil to 375° in deep kettle or fryer.

    Remove only one ice cream ball at a time from freezer.

    With tongs, hold ice cream in oil turning slightly until golden, approximately 5-10 seconds.

    Remove from oil and serve immediately.
