  • 2 zucchini squash, sliced
  • 2 yellow squash, sliced
  • 1 onion, chopped
  • 1/2 stick butter
  • 1 pkg. Hidden Valley Ranch dressing
  • 1 c. cheese
  • 1/2 c. mayonnaise
  • 1 egg
  • Atkins chips

Directions

    Stir-fry the squash and onion in butter until slightly tender, but still crisp. Do not add salt. Combine remaining ingredients with squash and put in a casserole dish. Top with Atkins chips and cheese. You can also use regular chips, seasoned dressing or crackers as a topping. Bake at 350° for 30 minutes.
