- 2 Rock Cornish hens
- 1/4 c. chopped green onions
- 1/4 c. dry vermouth
- 2 Tbsp. lemon juice
- 1 Tbsp. soy sauce
- paprika to taste
- fresh ground pepper to taste
Directions

1Wash hens and pat dry.

2Split hens lengthwise.

3Sprinkle green onions in a 12 x 8 x 2-inch baking dish, coated with vegetable cooking spray.

4Place hens over onions.

5Combine vermouth, lemon juice and soy sauce; pour over hens, then sprinkle lightly with paprika and pepper.

6Bake at 450° for 15 minutes.

7Reduce heat to 350° and bake an additional 25 minutes or until done.
