  • 1 1/2 lb. cooked chicken breasts, chopped
  • 1/4 (8 oz.) pkg. Neufchatel cheese, softened
  • 1 Tbsp. reduced calorie mayonnaise
  • 1 Tbsp. grated onion
  • 1 Tbsp. sweet pickle juice
  • 1/2 c. finely chopped celery
  • dash of curry powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 Tbsp. chopped pimento
  • dash of each: hot sauce and garlic powder
  • 2 Tbsp. chicken broth

Directions

    Combine cheese and mayonnaise, beating until smooth.

    Add onion, pickle juice, celery, curry powder, salt, pepper, pimento, hot sauce and garlic powder; mix well.

    Stir in chicken and 2 tablespoons broth.

    Coat a 2-cup mold with nonstick cooking spray. Pour chicken mixture into prepared mold and chill.

    Unmold onto serving plate; serve with Melba toast and raw vegetables.
