- 1 qt. low-fat milk
- 1/2 c. uncooked white rice
- 1/2 c. raisins
- 1 large egg
- whites from 2 large eggs
- 1/3 c. sugar
- 1 c. evaporated skim milk
- 1 1/2 tsp. vanilla
- nutmeg
Directions

1In large heavy saucepan, combine milk, rice and raisins.

2Bring to boil over medium heat.

3Reduce heat and boil gently, uncovered, about 20 minutes, stirring often until rice is almost tender.

4Meanwhile, in medium bowl, whisk egg, egg whites, sugar and evaporated milk until blended.

5Gradually add egg mixture to rice mixture, stirring constantly.

6Cook over medium-low heat about 5 minutes or until mixture is slightly thickened.

7Remove from heat and stir in vanilla.

8Pour into shallow 6-cup dish. Serve warm or cold sprinkled with nutmeg.

9One-half cup serving has 190 calories (2 grams fat, 30 mg cholesterol).
