Low-Fat Rice Pudding

  • 4 c. cooked rice
  • 2 eggs or 1 (4 oz.) carton Egg Beaters
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 c. sugar
  • 2 1/2 c. 2% milk
  • 1/2 stick light Parkay margarine
  • 1 tsp. cloves
  • 1 c. raisins

Directions

    Combine all ingredients in a saucepan.

    Heat until milk is hot but not boiling!!!

    Pour into a baking dish sprayed with Pam cooking spray.

    Sprinkle top with nutmeg and bake in a 350° oven for 30 minutes.

    Serves 6 to 8!!
