- 6 eggs
- 3 ounces lox
- 1/4 red onion
- 2 slices muenster cheese
- 2 tablespoons butter
- 1/4 teaspoon salt
Directions

1Dice onion.

2Shred lox into small pieces.

3Melt butter in frying pan.

4Fry onions.

5Put shredded lox into pan.

6Crack 6 eggs into pan on top of onions/lox mix.

7Mix everything together. Don't cook like a traditional omelet.

8Take of stovetop burner.

9Place slices of Muenster cheese ontop of omelet.

10Cover pan to allow cheese to melt.

11Salt to taste.
