- 1 c. diced chicken
- 1 can cream of chicken soup
- 2/3 c. mayonnaise
- 1 c. cooked rice
- 2/3 c. diced celery
- 2 Tbsp. minced onion
- 2 tsp. lemon juice
- 2 hard-cooked eggs, diced
- 1 c. cornflake crumbs or crushed potato chips
- 1/2 c. slivered almonds
Directions

1Mix all but crumbs and almonds and put in a 9 x 13-inch dish (do not pack down).

2Top with crumbs and almonds (almonds may be lightly browned first in 1 tablespoon butter if desired).

3Bake for 30 minutes at 325°.

4May substitute turkey, tuna, lobster or crabmeat for chicken.
