Ingredients
- 1/4 cup sugar
- 1 12-oz. can evaporated skim milk
- 1/2 cup skim milk
- 3/4 cup egg substitute
- 1/4 cup sugar
- 1/8 tsp. salt
- 1/2 tsp. almond extract
- 2 cups assorted fresh fruit
Directions

1Sprinkle 1/4 cup sugar into heavy saucepan.

2Place over medium heat, cooking, stirring constantly until sugar melts and syrup is light golden brown.

3Pour syrup into 6-oz. custard cups.

4Let cool. Combine milks in medium saucepan and heat until bubble from around edges of pan.

5Combine egg substitute, 1/4 cup sugar and almond extract.

6Beat well.

7Gradually stir about 1 cup hot milk into egg mixture.

8Add remaining milk, stirring constantly.

9Pour mixture evenly into custard cups.

10Cover with aluminum foil.

11Place custard cups in shallow pan and pour hot water to depth of 1 inch into pan. Bake at 325° for 25 minutes or until knife inserted near center comes out clean.

12Remove cups from water, and chill at least 4 hours.

13To serve, loosen edges of custard with spatula, invert onto plates.

14Arrange assorted fresh fruits around the sides.
