  • 1 1/2 tsp. baking powder
  • 1 c. shortening (butter)
  • 1 c. sugar
  • 5 eggs, well beaten
  • 1/2 tsp each: orange, lemon, rum flavorings
  • 4 c. (32 oz.) total candied pineapple, cherries, any combination fruit cake mix may also be used
  • 2 c. macadamia nuts (1, 7 oz. jar, 1, 3 1/2 oz. jar), chopped
  • xanthan gum
  • rum to soak loaves
