Macadamia Nut Salad

Ingredients

  • 2/3 c. sugar
  • 2 Tbsp. flour
  • 2 eggs, beaten
  • 1 c. pineapple juice
  • juice of 1 fresh lemon, squeezed
  • juice of 1 fresh orange, squeezed
  • whipping cream
  • 4 c. (5 to 6) apples
  • 4 oz. flaked coconut
  • 20 oz. can pineapple chunks
  • 1 jar Macadamia nuts

Directions

    Boil first 6 ingredients in top of double boiler until thickened.

    Put in refrigerator to cool.

    Whip up whipping cream and put in refrigerator to cool.
  4. 4
    Mix cooled sauce, 1 cup whipped cream and remaining ingredients.

    Serve cold.
