Macaroni Carbonara

  • 13 oz macaroni pasta
  • 1 tbsp butter
  • 4 slices bacon, roughly chopped
  • 1 clove garlic, minced
  • 1/2 cup heavy cream
  • 2 None eggs, lightly beaten
  • 3 oz Parmesan cheese, grated
  • 2 tbsp fresh chives, chopped, to garnish

Directions

    Cook macaroni in boiling, salted water until al dente. Drain.

    Meanwhile, melt butter in a large frying pan over medium heat. Saute bacon and garlic for 3-4 mins, until bacon is crisp. Drain on paper towels.

    Whisk together heavy cream and eggs then toss with pasta, along with bacon and cheese. Season.

    Serve topped with chives.
