- 1/2 c. sweetened condensed milk (Eagle Brand type)
- 2 c. shredded coconut
- 1 tsp. vanilla extract
- 1 Tbsp. grated orange peel
- 2 egg whites
- pinch of salt
Directions

1Preheat oven to 350°.

2Mix together milk and coconut; add vanilla and stir well.

3Stir in lemon peel.

4Put egg whites into bowl.

5Beat whites with electric mixer on low until frothy.

6Add salt and beat on high until stiff peaks form.

7Fold egg whites into coconut mixture.

8Drop batter by teaspoon onto buttered cookie sheets.

9Bake 15 minutes.

10Cool on flat surface.

11Repeat until all batter is cooked.
