- 4 mackerel
- 1 oz. butter
- 1 head celery, finely chopped
- 3 leeks, chopped
- 2 tomatoes, sliced
- 1 dessert spoonful tomato puree
- 5 oz. sherry
- paprika, salt and pepper
Directions

1Ask fishmonger to remove the head and backbone from the fish. Sprinkle mackerel with salt and pepper and grill on both sides for a few minutes.

2Put butter in a saucepan; add vegetables and cook for about 5 minutes, stirring frequently.

3Add tomato puree, sherry, pepper and salt.

4Arrange vegetables in casserole and put mackerel on top.

5Sprinkle each fish with paprika.

6Cover with lid and cook in gas oven on gas mark 4 (350°) for about 15 minutes.
