  • 1 small onion, finely chopped
  • 2 fluid ounces madeira wine
  • 27 fluid ounces beef stock
  • 12 ounce butter

Directions

    Saute the onions in a hot pan until they are well browned.

    Add the Madeira.

    Reduce the liquid by half, add the stock and then reduce by half again.

    Season.

    Pass through a sieve, then add the butter.

    Serve warm.
