- 2 fluid ounces madeira wine
- 27 fluid ounces beef stock
- 12 ounce butter
Directions

1Saute the onions in a hot pan until they are well browned.

2Add the Madeira.

3Reduce the liquid by half, add the stock and then reduce by half again.

5Pass through a sieve, then add the butter.
