- 1 c. egg substitute
- 2 tbsp. sugar
- 2 teaspoon vanilla extract
- 2 c. canned pumpkin
- 3/4 c. flour
- 2 teaspoon baking soda
- 2 teaspoon cinnamon
- 4 teaspoon pumpkin pie spice
- 1/2 teaspoon grated orange peel
- 1/3 c. dry powdered lowfat milk
- 1/2 c. raisins
- 1/2 c. shredded carrots
- 1/2 c. shredded zucchini
Directions

1Whip egg substitute with sugar, vanilla extract and canned pumpkin.

2Stir in flour, baking soda, cinnamon, pumpkin pie spice, orange peel and powdered lowfat milk.

3Add in raisins, carrots and zucchini.

4Pour mix into muffin pans coated with nonstick spray.

5Bake at 325 degrees for 20 to 25 min till toothpick comes out clean.

6Store in refrigerator or possibly freeze.

7Yield: 24 muffins.
