  • 1 (14 1/2 oz.) can Mexican style stewed tomatoes, cut up
  • 3/4 c. quick cooking brown rice
  • 1/2 tsp. sugar
  • 1/4 tsp. garlic powder
  • 1 (15 oz.) can black beans or red kidney beans, rinsed and drained
  • 1/2 lb. thinly sliced cooked beef, cut in strips
  • 1/2 c. salsa
  • 12 (7-inch) flour tortillas
  • plain yogurt (optional)
  • sliced green onion (optional)

Directions

    In a large skillet, stir together undrained tomatoes, rice, sugar, garlic powder, 2/3 cup water and 1/8 teaspoon pepper. Bring to boiling; reduce heat.

    Simmer, covered, for 12 to 14 minutes or until rice is tender.

    Stir beans, beef and salsa into rice mixture; heat together.

    Wrap tortillas in foil.

    Heat in a 350° oven for 10 minutes.
