Make-Ahead Mashed Potatoes

  • 6 medium potatoes (2 lb.)
  • 4 oz. dairy sour cream
  • 1 (3 oz.) pkg. cream cheese, cut up
  • 1 Tbsp. margarine or butter
  • 1/4 tsp. pepper or white pepper
  • 1/4 tsp. thyme
  • 1/4 to 1/2 c. milk
  • 1 Tbsp. margarine or butter
  • salt to taste

Directions

    Cook or boil pared potatoes until tender; drain.

    In a large bowl mash with a potato masher or beat with electric mixer on low speed. Add sour cream, cream cheese, 1 tablespoon margarine or butter, salt, pepper and thyme.

    Gradually beat in enough of the milk to make smooth and fluffy.

    Turn into a greased 1 1/2-quart casserole.

    Cover with foil and chill up to 24 hours.
