Make-Ahead Mashed Potatoes

- 8 large potatoes, peeled and cut up
- 8 oz. pkg. cream cheese
- 1/4 c. sour cream
- salt to taste
- pepper to taste
- butter
Directions

1Boil potatoes in salted water until tender.

2Drain and mash. Add cream cheese, sour cream, salt and pepper; mix well together. Put in a greased 2-quart casserole or baking dish.

3Top with a few pats of butter; cover.

4Potatoes may be stored in the refrigerator for several days.

5Before serving, bake, uncovered, in a 350° oven about 45 minutes or until heated through.
