Make-Ahead Mashed Potatoes

  • 8 large potatoes, peeled and cut up
  • 8 oz. pkg. cream cheese
  • 1/4 c. sour cream
  • salt to taste
  • pepper to taste
  • butter

Directions

    Boil potatoes in salted water until tender.

    Drain and mash. Add cream cheese, sour cream, salt and pepper; mix well together. Put in a greased 2-quart casserole or baking dish.

    Top with a few pats of butter; cover.

    Potatoes may be stored in the refrigerator for several days.

    Before serving, bake, uncovered, in a 350° oven about 45 minutes or until heated through.
