Make Ahead Mashed Potatoes

  • 5 lb. potatoes
  • 2 (3 oz.) pkg. cream cheese
  • 1 (8 oz.) sour cream
  • salt and pepper
  • onion
  • butter or oleo

Directions

    Cook potatoes (peeled or not) for mashing.

    Salt if desired. Mash potatoes and add cream cheese and sour cream (add no-fat variety if you like).

    Dot with butter.

    Put into casserole and cover with foil.

    Refrigerate until ready to use.

    Warm in slow oven.

    Will keep in refrigerator several days.

    If reheated in microwave, cover casserole with Saran Wrap and warm on Medium power.
